Outdraw - To make a better hand than your opponent's by drawing more cards.

In the old west, if you “outdrew” your opponent in a gunfight, you won (by virtue of the fact that he was dead and you were still standing).

In poker, you can outdraw a superior holding by seeing (and presumably paying for) more cards and making an even stronger hand. Often times, players are getting the right odds to draw to straights and flushes, or even with just overcards.

Outdraws are the cause of much animosity at a poker table. Many players steam and go on tilt when they get outdrawn. When you hold AA and call an all-in player who has 99 and they hit a two-outer on the river to “draw out” on you, it can be very frustrating indeed. Some outdraws are justified by odds, while others are just borne of stubbornness and/or arrogance or a rivalry between two players. Getting outdrawn is unavoidable and a part of poker.
